It's farmer's market season which means we’re all on the hunt for new ways to use our fresh, local produce. One easy (and delicious) way to use fruits or veggies in baking is with a simple galette. A galette can be sweet or savory and uses a simple pie crust-like dough that is folded over the center filling, leaving a wide opening from which the filling can be seen. By making a batch of this simple dough, you can have a savory entree or a fruit-filled dessert.

Galette Dough - Makes 1 Galette

½ tsp sugar 

¾ tsp salt 

1 ⅓ cups flour 

¾ cups chilled butter 

1 egg (for egg wash) 

Dough Instructions

  1. In a food processor, add sugar, salt, and flour. If you don’t have a food processor, you can use a bowl and fork. Once combined, add in chilled butter. Pulse until butter is fully incorporated and the dough comes together. Form the dough into a flat disk and place in the fridge for 30 minutes - 1 hour. 
  2. Once your dough is chilled, place it on a floured surface and roll to a circular shape with ⅛ inch thickness. Place the dough on a baking sheet with parchment paper. 
  3. Preheat the oven to 375 degrees. 
  4. Add choice of filling to the center of the dough leaving ½ inch of space between the filling and the edge. Fold the remaining ½ inch of dough over itself into pleats around the entire edge to form a seal. Brush the outside folds with egg wash. 
  5. Bake for 45-50 minutes. The crust should be golden brown and the inside should be bubbling. 
  6. Cool and enjoy! 

Savory Tomato Thyme Galette Filling

1 onion 

1 tbsp butter 

2-3 medium heirloom tomatoes sliced 

½ cup shredded cheddar cheese

½ cup blue cheese crumbles 

5 sprigs of thyme 

Olive oil 

Salt + pepper 

Instructions

  1. In a pan, add butter and onion. Cook until onions are caramelized, 3-4 minutes. Remove from heat and add salt and pepper to taste. Stir in thyme. Set aside. 
  2. Use your galette dough that has been rolled to ⅛ thickness. Crumble blue cheese, cheddar cheese, and onion mix in an even layer on the dough leaving ½ inch of space between the filling and the edge. Place sliced tomatoes in a circular pattern over the 1st layer, starting from outside to the center. Drizzle tomatoes with olive and a dash of salt + pepper. 
  3. Continue with steps 4-6 of the galette dough instructions. 

Sweet Peach Galette Filling

3 cups sliced peaches 
¼ cup brown sugar (more or less for desired sweetness) 
½ tsp cinnamon 
½ tsp vanilla extract
Juice of half a lime

 

Instructions 

  1. Combine sugar and cinnamon in a medium sized bowl. In a large bowl, add sliced peaches. Stir in sugar and cinnamon mixture. Once peaches are fully coated, add vanilla extract and lemon juice. 
  2. Use your galette dough that has been rolled to ⅛ thickness. Place peach mixture in a circular pattern starting from outside to the center. 
  3. Continue with steps 4-6 of the galette dough instructions.  
  4. If desired, service with fresh whipped cream or ice cream.
