Decadent Dessert for Two: Protein Chocolate Mousse

Indulge guilt-free this Valentine's Day with our swoon-worthy recipe for a protein-packed chocolate mousse dessert! It's high in protein, low in sugar and 100% delicious.

Protein Chocolate Mousse

Ingredients:

3 eggs, separated

¾ c plain Greek yogurt

¼ c coconut sugar

2 Tbsp cocoa powder

Pinch of salt

1 ½ cup dark chocolate, chopped

Directions:

  1. In a medium saucepan, mix together the egg yolks, coconut sugar, cocoa powder, and salt. Stir constantly until the mixture thickens and comes to a slight simmer. 
  2. Remove from the heat and add the dark chocolate. Store until combined. Set aside.
  3. Whip egg whites to stiff peaks. Gently fold in a little bit of the chocolate mixture at a time until fully combined. Be careful not to mix too hard or the egg whites will deflate.
  4. Pour into cups and chill for 2 hours.
  5. Top with whipped cream and chocolate shavings. 

Notes:

  • Makes 2 large servings or 4 smaller servings.
  • Chocolate can be whatever type you like. We opted for a sugar-free dark chocolate.
  • Coconut sugar can be substituted for any type of granular sugar you prefer.
