Easy and Nutritious Snack Recipe: Apple Ricotta Toast

 

Need an easy and nutritious snack that will delight your taste buds? This Apple Ricotta Toast has everything you need:

  • Ricotta for a good source of protein
  • Sourdough for fiber and whole grains (plus it’s easier to digest!)
  • Pistachios for a healthy fat
  • Apples and honey for a natural sweetness
You can swap whatever fruit is in season to change it up. Pears, oranges or peaches would all be delicious! This recipe makes two servings. 

Ingredients:

2 slices sourdough bread, toasted

½ cup ricotta, divided

1 apple (we used Honeycrisp), thinly sliced

2 Tbsp honey, divided

2 Tbsp pistachios, chopped

1 Tbsp fresh thyme (garnish)


Directions:

  1. Wash apple and thyme, allow to dry on Dorai Dish Pad
  2. Toast the bread, then spread about ¼ cup of ricotta on each slice of toast 
  3. Next, add a layer of thinly sliced apples on top of the ricotta 
  4. Drizzle 1 Tbsp of honey on each slice, then top with chopped pistachios and a sprinkle of fresh thyme
