We’re always looking for a simple salad to whip up during the summer months to accompany our backyard barbeques. We’re big fans of finding ingredients that are in peak season to use when cooking, that’s why this Blackberry and Peach Summer Salad is our go-to!
3 fresh, ripe peaches
½ cup blackberries
1 cup walnuts, almonds, or pecans
5 oz mixed greens (we love using a mix of spinach, arugula, and lettuce)
½ cup shaved parmesan cheese
¼ cup pumpkin seeds (no shell)
¼ cup olive oil (the fresher, the better)
¼ cup fresh lemon juice
¼ cup honey
- Wash your produce and let dry. We love drying our fresh produce on our Dish Pad.
- If you want to really bring out the flavor of the peaches, we love throwing them on the grill for 2-3 minutes on each side.
- Add greens into a large bowl and top with peaches, blackberries, nuts, pumpkin seeds, and parmesan.
- Make the dressing by combining all ingredients into a tightly sealed container. Shake for one minute and pour over salad. Combine.
